Individual little filled pastry parcels are a great way to serve up savoury or sweet treats, but they can be fiddly to make if you’re not a pastry chef (if you are, we’re always happy to sample your work…). So Betty Bossi have come up with this 3-in-1 Pastry Pocket Maker, which makes it really easy to shape, fill, cut, decorate and bake four pastry parcels that look completely even, as though they’ve been made by a proper professional. It’s not really cheating, just lending a helping hand (fine, it’s totally cheating, but your guests never have to know).

What you get and how it works

  • Carbon steel baking tray – with 4 holes/moulds with perforated bases (which let moisture escape, so your pastry turns out nice and crisp rather than soggy), and a non-stick coating so they turn out easily too. Just lay a sheet of pastry dough over the whole thing and press into each hole.
  • Pastry lid mould – the same length and width as the tin, with holes in it the same shape and size as the holes in the tin. Pop it on top of your ‘lid’ sheet of pastry to act as a guide, then use the individual pastry lid cutter or a knife to score the sheet. Then pop it on top of the tin to add the filling – that way, it’ll all end up in the holes, rather than scattered around the edges too. It also acts as a cutter to remove the extra pastry between the holes of the tin – position it on the top then press down to cut away the excess and leave a pretty crimped effect round the edges of each pastry.
  • Individual pastry lid cutter – with a handle on the back so it’s easy to, well, handle, it has cutters on the base that cut your pastry lids. Just press it down once one way round, then rotate through 180 degrees and press down again to create a pretty latticework effect.

Food glorious pastry-packaged food

Once your pastries are moulded and filled and lidded and pressed, finish them off with a little egg wash and pop them in the oven. When they’re baked, the non-stick coating helps you remove them easily, ready to slip onto a plate and add whatever sides you like. And of course, you don’t have to add lids; open pastries work just as well.

Savoury or sweet?

You can’t go wrong with classic cheese & onion, or Mediterranean veggies, or minted minced lamb on the savoury side, or fruit-filled blueberry or apple pies on the sweet. And to help you along, it comes with a booklet containing four delicious recipes for extra inspiration.
