Every thing I watch says you only need a few drops of gel food colouring to colour the cake. I put in twice as much as I thought I needed, two good globs per colour, (bare in mind it says 1g of colouring per 1kg of cake mix and I was only dying 250g for each colour). Colour did happen but I got a gradient of barely there/beige at the bottom up to a more intense colour at the top. Over greasing can cause the edges of the cake mix to ‘scorch’ and darken. Check the oven temperature to ensure the cake doesn’t over cook and darken too much. Check cooking time – too long cooking will cause the cake to darken. Using ‘scratch’ ingredients – fresh eggs and margarine can affect the colour of the finished cake – better results may be obtained using a box cake mix as this results in a paler base mix. Also mixing a scratch mix for a longer time to achieve a paler base mix might help too.
"Fab colours for rainbow cake" star star star star star Used this to make a rainbow cake for my daughter’s birthday. Turned out amazingly. Tiny amount of colour needed so lots left to use for other things. No purple so mixed the blue and pink which was perfect.
