Fancy having a go at making your own baguettes? One of the secrets to that characteristic crispy crust is proper proving. So we bow to the French, who use couches – cosy linen blankets – to wick away excess moisture and stickiness, maintain the shape of the baguette dough and help achieve a crisp crust.

Wrap them up

You could prove your baguettes in a tea towel, but this traditionally woven 100% Linen Couche has been specially designed for the job. Simply lay out the blanket, place your shaped baguettes on it, leaving enough space to create ridged folds between them, and bring the ends over to cover them up – it’s nice and big so will accommodate up to three standard size baguettes – and leave it to do its stuff.

Your reward? Perfectly proved baguettes, ready for baking to crisp-crusted deliciousness. Pass the butter, oh, and the cheese, and is it too early for wine?
