As you might have already guessed from the name, couches are widely used in France, and it’s fair to say they know a bit about bread making. You could line your proving basket with a tea towel, but this traditionally woven Linen Couche has been specially designed for the job. Simply place the couche in your proving basket, put your dough in the middle and wrap it up in the blanket – it’s nice and big so will go round the largest balls of dough – and leave it to do its stuff.
