An all-in-one baker’s friend, Emile Henry’s beautiful red Round Bread Baker is a professional piece of kit that will have other bread bakers drooling with envy (especially when they smell the just-baked results of your home-made bread). Based on the original Emile Henry Bread Cloche, it’s a 2-in-1 mix, make and bake combo that’s been created for bakers who want their baking equipment to be as efficient as can be in every possible way – for use and for storage.

Separately the pieces are great at what they do and, when combined, they replicate the atmospheric heat of a traditional stone-built baker’s oven – allowing you to bake crisp-crusted rustic loaves in any modern stove. Brilliantly designed, with well over a century of baking know-how, the heat-retentive properties of this special ceramic will keep a loaf warm for several hours after baking so you can enjoy it ‘fresh from the oven’ even if you’ve planned ahead and baked it earlier in the day. And, when the bread’s been baked, presented and eaten, both pieces can go into the dishwasher to be cleaned and the tray stacks neatly inside the dual-purpose bowl for storage.

How to use the Emile Henry 2-piece Round Bread Baker

  • Mix your ingredients in the generous ‘mixing bowl’ part. It has sloped sides, so there’s plenty of room to get your hands inside to mix and knead the ingredients for your dough, then pop the flat lid on top to make the perfect environment for a first prove.
  • After the first rise, the roles of the two pieces are reversed. Knock back the dough on your worktop and shape it into a simple ball then flour the criss-cross markings on the baking tray (that was your lid), pop the dough on top and the domed bowl becomes the lid while your dough proves for the second time. (Now is the time to pre-heat your oven.)
  • Once the dough has doubled in size, brush the top of the dough with water, make a cut in the top to let the bread expand in the oven (more cuts are optional if you feel the need), re-cover with the domed lid and put the whole Bread Baker into the oven. The curved shape of the lid encourages steam to form which helps create a crispy, flaky crust on your loaf while preventing any risk of scorching, and the lugged handles at the sides act as vents so there’s no risk that your loaf will be ‘soggy’.

I've always made bread and so unsure what benefits this would give. The clear recipes produced wonderful-looking bread. I was a bit concerned that my loaf did not slide off the tray with ease. But when cooled it released itself effortlessly! The loaf was light with a lovely crumb, a soft crust and a delightful taste and texture. If you want a crispier crust then remove the lid 10 minutes before the end of your bake time and turn the oven down. Reliably successful every time. It is a large, heavyish item to store, but great to use, providing the perfect steamy environment for great bread!

"Excellent Bread Baker"

We are keen home bread bakers and were excited to receive this product to try out. This ceramic baker produces excellent results with both the traditional white loaf recipe from the included booklet and also our own sourdough recipe. It gives a good oven spring with a great texture and crust to the bread. A deeper crust may be achieved by removing the bowl 15 minutes before the end of baking. It is easy to use and clean. We trialed both flour and semolina to dust the base to avoid the loaf sticking and would recommend semolina as this gave better results.

"Very stylish piece of equipment - an asset to any kitchen"

This was smaller and lighter than anticipated, which was welcome, but still sufficient for a large standard loaf. The crust of the loaf I baked looked and tasted terrific - but a lot of the base of the loaf remained stuck to the bottom of the platter. The bread baker's instruction booklet recommended on the first few occasions of baking with it, to put a thick dusting of flour on the platter before placing the loaf on it. Clearly I had not used enough flour. I am uncertain how much is needed and wonder whether oiling it might help? I oiled the dome of the baker and had no problems with that.

"Quality product but a couple of small niggles"

Upon unwrapping this product, I was surprised to find the bowl was unglazed and I wondered what would happen when I tried to use it as a mixing bowl, knowing how difficult it can be to keep dough from sticking to my glass mixing bowl and the stainless steel bowl on my mixer. Today I tried to use it for the first time and as I feared, the dough stuck to the bowl, so it was not just a case of reversing cover and base for baking. I have yet to see the resulting loaf, but I do think the description is misleading and the lack of glazing and its implications should be made clear.
