Whether you choose to bake a plain white farmhouse loaf, rye or gluten-free loaf (or all of them, one after the other), this brilliant baking mould will soon be your very best friend.

Shaped to bake a straight-sided baker’s loaf, it’s a two-piece ceramic ‘loaf tin’ with a perforated lid that keeps just enough steam inside to encourage a deliciously crisp crust every time. And, once you take the loaf baker out of the oven, its heat-retentive walls will keep your loaf toasty-warm inside for ages until you’re ready to let everyone taste it… But the heavenly aroma of fresh-baked bread is sure to spread through the house to tantalise the whole family’s taste buds and draw them to the dinner table without you having to shout once.

How to use the Emile Henry Bread Loaf Baker

  • Make your bread dough as per your chosen recipe and set it aside for its first prove.
  • Grease and flour the inside of the base and, when you’ve knocked back your dough after the first rise, pop it into the Loaf Baker for its second proving (with the lid on) while you preheat your oven.
  • When the dough has risen again and the oven is hot, brush the top of the loaf-to-be with water, pop the lid back on and bake.

"Good for yeasted and Sourdough loaves"

I was given this loaf baker as I am a keen baker. I found it worked well for a yeasted loaf as well as a sourdough loaf. It is very attractive and would certainly make a great gift. It is very easy to use as you put dough in the baker after bulk prove. I baked yeasted loaf for 40 minutes and it was done when tested. With the sourdough loaf I left the loaf in the fridge overnight and then put It in a cold oven and baked for 50 mins. The loaves came out with a crisp crust. It’s a better shape for sandwiches too. You do need to put some oil and flour in the baker before use so it doesn’t stick.

"My first loaf failed!"

1st attempt I used stone ground flour from a local mill. It was a basic white loaf using 14g dried yeast. During cooking the loaf rose so much that it pushed the lid up, the exposed sides burned, and the crust stuck to the lid. 2nd attempt - same recipe with suermarket bought flour, again the loaf rose - not to the same extent. Burned sides and stuck to the lid, although after leaving for 10 minutes it released nicely. 3rd attempt - back to the local flour and half the yeast. Success! - a nice loaf, good shape, crusty top and fluffy inside. Easy to clean, and baked on crust merely soaks off.
