Just the right size for sautéing a steak or two, this 24cm Mineral B Element Frying Pan from de Buyer is a frying pan of class, with a pedigree that’s highly coveted by chefs in top-class kitchens – and because it’s made in the old-fashioned way, with no chemical coatings and no glossy packaging – it’s remarkably kind to the environment too.
Packed by hand into an eco-friendly brown paper bag with an understated cardboard wrap beneath that, this pan may look unassuming, but it’s actually a seriously impressive piece of professional-standard kitchen kit.
About the Mineral B Element range
Made from high quality carbon steel
Crafted from thick, high quality steel, with a triple-riveted handle, these pans are highly sought after in professional kitchens. Able to withstand temperatures up to 300°C they’re ideal for searing meaty steaks and fish fillets, browning chunks of meat and vegetables for casseroles and slow-cooked stews, and for cooking a good old-fashioned fry up. And just like pans in hotel kitchens, it’ll be no problem to pop this frying pan under a grill or salamander to brown a cheesy topping or toast a crust of breadcrumbs and herbs.
Strong riveted handle
Triple riveted and set at a precise angle to make the pan easy to handle, the solid steel handle has a transparent epoxy resin coating to enhance the colour of the steel and make it easier to grip. There’s a hole at the end of the handle to help you hang it up within easy reach of your hob and, as a finishing touch it has a golden B riveted into place, so anyone in the know can see at a glance just how seriously you take your cookery. Please note: this handle should not be put into the oven for more than 10 minutes – max. temperature 200°C.
Suitable for all hobs
Being made from steel, Mineral B Element pans are ideal for induction hobs, and will perform impressively on all other stovetops too – even a traditional solid fuel stove – and they’re more than a match for gas flames.
Metal utensil friendly
Because there’s no man-made non-stick coating, there’s never a worry over using metal utensils – the durable steel will withstand all sorts of clattering and scraping as you turn, lift and stir your ingredients.
Develops a patina with age
Processed into pure steel from mineral iron ore, each of DeBuyer’s Mineral B Element pans are coated inside and out with natural bees’ wax before they leave the factory to protect their surfaces – keeping them rust free until their new owners get them home… A swift wash under really hot water and the pan is ready to be seasoned* before you start cooking – any remaining beeswax helps to start the seasoning process – and your pan will gain a darker patina every time you cook with it, becoming better and better with age and use until, eventually, it becomes naturally non-stick.
*To season your pan before first use, add enough oil to cover the base of the pan (approx. 1mm deep), heat the pan till the oil is smoking, then wipe the oil all around the inside of the pan with some paper towel – once this is done, your pan is ready to use.
Please note: DeBuyer advise that a Mineral B pan should NEVER be washed with soap. Simply deglaze the pan with hot water after each cooking session and rinse it under a hot tap before putting it away completely dry – do not leave to drip dry! An occasional purification is recommended – heat salt crystals in the pan for around 90 seconds, then discard the salt, add oil, heat and wipe with paper towel to continue its seasoning and enhance the patina further.
