Why eat kefir cheese?
A healthier alternative to cream cheese and sour cream, kefir cheese contains all the probiotic micro-organisms that are thought to be so beneficial to your health, and helps to regenerate muscles and boost immunity, while being delicious served on its own or replacing other cheeses in a variety of dishes. The straining process also produces whey as a by-product which is another big source of protein – this can also be used in many different recipes to ensure you get maximum health benefits and prevent it going to waste.
Easy to use
An ideal accompaniment to the Kefirko Kefir Milk and Water Maker, this easy-to-use kit contains everything you need in one jar to make a fresh and healthy soft cheese in only four steps – no cheese starters or additives are required. All you need is fresh home-made milk kefir – if you make it in the Kefirko Milk and Water Kefir Maker, straining one 600ml batch makes approximately 200-300g of soft kefir cream cheese. Simply secure the mesh basket and ring in the glass jar, pour the kefir into the Kefir Cheese Maker, pop the lid on securely and leave it to strain in the fridge. When it’s finished, remove the mesh basket and tip out your kefir cheese onto a plate ready to serve.
This smooth and creamy cheese is delicious served as it is, or you could try adding different flavours depending on your taste. For a sweeter option, add dried or fresh fruit pieces, cocoa powder, honey or jam, or try dried or fresh herbs, spices or nuts for a more savoury flavour. You can either add your flavouring at the beginning of straining or once it’s finished. The included recipe book contains lots of ideas for using your kefir cheese in all kinds of dishes, from quiches and potato gratin to cheesecake and ice cream.
Not just for soft kefir cheese, this clever multi-purpose kit includes basic recipes for making home-made mascarpone, mozzarella, ricotta or greek yoghurt as well. The longer the kefir strains, the drier and thicker it becomes – leaving it for a few hours creates a thicker kefir that can be used for dips; leaving overnight gives a creamy cheese and 1-2 days produces a semi-hard cheese. The included pressing spring also helps to create a firmer cheese during straining. This versatile kit allows you to experiment and make your cheese exactly how you like it, and for those days when you don’t want to make cheese, you can easily make fresh iced tea, iced coffee or almond milk in it as well.
Easy to clean
Comprising a glass jar and BPA-free plastic lid and accessories, the fridge-safe jar is airtight and leakproof with the lid on, and all the parts can go in the dishwasher for easy cleaning when you’ve finished making your kefir cheese.
