I haven't bought a cake mix in years, and only really bought this one to make up the 'free postage'. It sat in the cupboard for a month or so, then on a whim I baked it. Getting sidetracked I ended up putting in the same amount of oil as water. But keeping my fingers crossed, I poured it into a lined loaf tin and baked it for a good 50 minutes. The result is a wonderfully spicy, light as air ginger cake and absolutely delicious. My 'mistake' has proved a winner. I've no idea about its keeping properties - if it's still around after a couple of days I'll be very surprised.
I bought 2 of these cake mixes as they sounded delicious.It was easy to mix and could be made into a round or loaf style cake or muffins, I made a round cake. It rose nicely and looked good ,however the texture and taste were disappointing, it was more like a sponge with bits of stem ginger in it. I like a ginger cake to be moist and sticky this was not.I left it in a cake tin for 3 days to mature as by then a ginger cake will have improved in taste and testure, this didn't. I have donated the other lack to the local food bank.I am disappointed as it's not up to Lakeland's usual standard.
