Tempering Chocolate
To ensure your chocolatey treats have that professional-looking sheen, you will need to temper your chocolate. This stops the cocoa fat from separating, preventing that dull grey finish and meaning the chocolate shrinks slightly when set for an easy release from the mould. For those complaining about not being able to get the chocs out of the mould...it's user error! Temper the chocolate properly, allow it to cool to room temp, put it in the fridge for a few mins. A tap against the worktop pops the chocolates out. If any are stuck, put in freezer for 3 or 4 mins, then tap again. These moulds give a really professional, shiny finish. I've painted the insides with oil based colours, also used gold flake / dust. All come out great. I ordered some moulds from WE Links, they arrived just as fast and they are identical moulds to these ones, but several quid cheaper!
These moulds were ideal to celebrate Valentine's Day other moulds i.e. Magnetic moulds are very expensive but these are cheap to use to celebrate the occasion i.e. £9.50 as compared to £40.00 so great value
At my first attempt I made some lovely chocolate hearts using this mould. It wasn't very easy to get the chocolates out of the mould, but I'm sure I will get better at it! However, the one disappointing thing about the product is that the central heart mould has a dip in the base due to the way the mould itself was made. This means that the chocolate from that individual mould has a pointed bit on the top when turned out. Not so attractive!
There is no give in the mould at all & so it was difficult to get the chocolate out of the mould without banging it. I'm disappointed!
