Tempering Chocolate

To ensure your chocolatey treats have that professional-looking sheen, you will need to temper your chocolate. This stops the cocoa fat from separating, preventing that dull grey finish and meaning the chocolate shrinks slightly when set for an easy release from the mould. "Valentine moulds"

These moulds were ideal to celebrate Valentine's Day other moulds i.e. Magnetic moulds are very expensive but these are cheap to use to celebrate the occasion i.e. £9.50 as compared to £40.00 so great value

"Lovely chocolate hearts"

At my first attempt I made some lovely chocolate hearts using this mould. It wasn't very easy to get the chocolates out of the mould, but I'm sure I will get better at it! However, the one disappointing thing about the product is that the central heart mould has a dip in the base due to the way the mould itself was made. This means that the chocolate from that individual mould has a pointed bit on the top when turned out. Not so attractive!

"Great moulds, but higher price than competitors"

For those complaining about not being able to get the chocs out of the mould...it's user error! Temper the chocolate properly, allow it to cool to room temp, put it in the fridge for a few mins. A tap against the worktop pops the chocolates out. If any are stuck, put in freezer for 3 or 4 mins, then tap again. These moulds give a really professional, shiny finish. I've painted the insides with oil based colours, also used gold flake / dust. All come out great. I ordered some moulds from WE Links, they arrived just as fast and they are identical moulds to these ones, but several quid cheaper!

Couldn't get the chocolates out of the mould at all - not one! What a waste of time, chocolate and delicious, liqueur-soaked fruit. Will be returning.

Thanks for placing your review. We're sorry to hear that you're having difficulties with the mould. To remove the chocolate, preparation is key:ensure the mould is clean and dry - wash in hot soapy water, rinse well and dry with cotton wool or a microfibre cloth. Then using a microfibre cloth to polish to a high shine, this helps to ease the chocolate out and helps with smooth shine on the chocolate. The filled mould can be placed in the fridge for 15 minutes. This will help the chocolate shrink and release from the mould’ When the chocolates are stuck in the moulds this happens when the chocolate hasn't been tempered well enough, so it hasn’t shrunk away from the mould. There isn’t anything you can do other than wash the mould in hot soapy water, rinse and dry thoroughly and start again.’ It may also help to tap the mould on the work surface to release the chocolates from the mould once you're happy with the set. We'll be in touch shortly with this advice

"Disappointing product"

Sorry but unless someone can tell be how to get the set chocolates out of the mould I will be returning it. Tried everything and ended up re melting it all and scraping out the chocolate.

Then using a microfibre cloth to polish to a high shine, this helps to ease the chocolate out and helps with smooth shine on the chocolate.Fill the mould to the brim and scrape of any excess - tap the mould three to four times to release any air bubbles from the chocolate. Now invert the mould over your bowl of chocolate and tap the side of the mould with your scraper to release any loose chocolate.We hope this works well for you.
