Cooking delicate sauces or making custard from scratch can be a tricky process, requiring constant vigilance to make sure your pan doesn’t get too hot and the contents don’t stick or curdle. Well this Porringer from KitchenCraft is designed to help make that process a bit easier.
Like an all-in-one bain marie, a porringer is a traditional type of pan designed especially to avoid such catastrophes by keeping the contents of the top pan away from the direct heat below. Simply add boiling water to the saucepan base, place your ingredients in the round-bottomed insert and sit it on top, cradled safely out of harm’s way.
Not just great for delicate sauces and custards, it is also ideal for whipping up your morning porridge or scrambled eggs. The robust stainless steel body is complemented by a vented glass lid, to let you keep an eye on how your food is progressing. It is also suitable for all hob types, including induction.

I am very happy with the way my porridge and scrambled eggs cook. I am disappointed in the quality of the porringer. The two handles get HOT! as does the pan lid knob. I remember panhandles like this from a long time ago. This is not a cheap pan surely at nearly £40? I don't own a pan with a handle that gets hot any more.....until now. And it took a long time to be delivered. Not a happy purchase I'm afraid.

This pan cooked my porridge to perfection and the gentle heat of a double boiler and great non-stick finish meant clean-up was a breeze. I am now thinking how great it will be for custards, rice pudding and sauces at Christmas. The only downside was that porridge did take longer to cook this way which I mitigated against by putting the oats to soak in the pan overnight so they were already soft and easy to cook in the morning..
