Honestly I had had to give up making many soups and other dishes requiring finely chopped vegetables due to arthritic hands but this has restored my ability to do them. Last time I tried manually it took me over 3 hrs to prepare the ingredients for Ina Gartens winter minestrone as I kept having to rest my fingers but with this superb attatchment under 5mins once they are peeled. The only thing that could improve this is the option of a larger cutting grid as the dice are small and I would like to be able to use it for preparing vegetables that are chunkier so I could roast them for instance.
