If you’re already a fan of Japanese cooking, you’ll recognise this Damascus 16.5 cm Japanese Vegetable Knife as a nakiri, or nakiri bocho, knife. With its straight-edged blade and squared-off tip, Japanese chefs prefer this knife for cooking vegetables and making sushi because you can cut all the way down to your chopping board without using a push or pull action for a quicker, cleaner cut. Our super-sharp perfectly-balanced, full tang knife also has a strong, lightweight wooden handle to makes any amount of chopping really comfortable, too.

About Lakeland Damascus Knives

Sharpened using the same techniques as those used to make Samurai swords, Damascus knives undergo a process of lamination where the super-hard carbon steel core is layered with 67 coatings of stainless steel for a distinctive blade that is strong yet flexible with a superior cutting edge.

This multi-layering technique is believed to have been discovered in Damascus around 300BC – hence the name – eventually making its way east to be perfected by Japanese sword-smiths where the blade’s finish was aptly named ‘kasumi-nagashi’ or ‘floating mist’.

Full tang with an ice-tempered blade, each beautifully balanced knife also has a comfortable riveted wooden handle to give you excellent precision and control.

"love this blade"

I bought this blade to cut hard root vegetables, and also soft fruits. The weighting of the knife is excellent and feels very balanced. The cutting edge is razor sharp and cuts soft tomatoes and hard turnip with equal ease! I wish they sold a block of these knives.

I'm a professional Head Chef and have been for over ten years so, as you might imagine, I've amassed a number of knives over the years, ranging from 'entry level' knives up to my collection of eye wateringly expensive Japanese Shun's so, when I was kindly gifted this knife as a birthday present, the pragmatic (snobbish) side of me started to twitch. 'A Japanese Damascus Nagiri knife for that kind of money! Can't be much cop' I thought. How wrong was I! This knife is now my number one tool of choice and my stupidly expensive knives have been relegated to my knife bag! Fantastic product!
