If you also buy the premium skins as I did, you won't spend ages chewing through the typically hard skins as on most shop bought bangers these days. Have used this machine 3 times now, and unless you are particularly dexterous, two pairs of hands will make it twice as easy - and twice the fun! The recipe book says to use the fine hole plate but we found this resulted in a smooth pate texture so used the medium hole plate thereafter giving much better results.
