"Make round pancakes!"
Many years ago I had a cast iron "pofinjer" pan, given to me by a friend who lived in Holland. Unfortunately it was lost when we moved house and for 25 years we have wanted a replacement. Today we had our first poffingers for 25 years made in our Lakeland Ebelskiver pan.Fantastic! Gorgeous round donutty balls with maple syrup and cream..Next time we shall try adding goodies like a piece of apple (traditional), cheese, choc chunks, prawns - the possibilities are endless.Here is a good basic recipe. (Makes about 24.)1 1/4 cups SR flour1 1/2 teasp baking powder.2 tablesp. caster sugar1 1/4 cups milk 1 large egg.Chuck it all in a mixing bowl. Beat till smooth.Pre heat pan to medium.Add tablesp.mix to each well.Turn over when cooked on one side.Keep in dish in warm oven until all cooked. Enjoy!Incidentally the pan is fantastic quality. I was doubtful about the appearance in the photo but it is really heavy aluminium - you should show a picture of the underside as well.
