"Just one word of warning. Well, two."
I recently tried to make two of the recipes from this book, using my Lakeland My Kitchen bakeware. I was a bit surprised to find that the baking trays specified in the book were smaller than my smallest My Kitchen ones. Size in the book - 8" x 12" (or 20 x 30 cms) however mine were 9" x 13" (23 x 33 cms). In baking proportion counts for a lot, so I was dismayed at this (I had got over the annoyance of finding the temperature was 'moderate' quite quickly, by simply looking at other recipes to see what moderate translated as for them - and I have my Lakeland cake tester). But a baking tray both an inch too long and too wide? Not funny. I was able to use cake tins instead (which worked reasonably well) but shouldn't have been put in this position in the first place.Also, I discovered that the Lumberjack Slice - although triple tested - turned out like pudding because of the sugar/milk/coconut topping which is poured over for the last ten minutes of cooking time. Because it was being made in a loose-bottomed cake tin, it came through the bottom. Thanks.So although it was more stressful than anticipated - they still tasted pretty good. I just can't believe a company like Lakeland would sell different sized baking trays to those in their own recipe book.
