vanilla custard
MAKES ABOUT 600ml
ingredients
- 2tsp cornflour
- 500ml whole milk
- 25g caster sugar
- 2 eggs
- Vanilla extract
method
- Blend the cornflour with a little cold milk in a bowl and mix to a smooth paste. Heat the remainder of the milk in a saucepan and, once hot, pour over the cornflour paste, stirring constantly to prevent lumps forming.
- Place the mixture back into the saucepan then, continuing to stir constantly, bring to the boil and boil for 1 to 2 minutes to ensure the cornflour is thoroughly cooked.
- Remove from the heat, stir in the sugar and leave to cool.
- Beat the eggs lightly then add a little of the boiled mixture, stir well and return to the saucepan with the remaining mixture. Heat gently, stirring all the while, until the custard has thickened, taking care not to allow the custard to boil.
- Add a few drops of vanilla extract to taste.
- Can be served hot or cold.
