300ml (½ pint) orange juice (freshly squeezed if possible)

The way to create the superlative Smoothie is to make sure that you use the ripest fruit possible. When a fruit ripens its natural sweetness intensifies. For instance, a squidgy, black-skinned banana whizzed up with a glass of ice-cold milk will make a glorious, naturally sweet milkshake, packed with banana flavour. On the other hand, choose an unripe banana, and you have a drink that tastes of nothing.
Strawberry and mango smoothie
Place the fruit in a blender, Smoothie Maker or use the Bamix De Luxe and whiz until smooth. Add the yoghurt and milk and whiz again. Pour into glasses, garnish with a strawberry and serve immediately.
Orange, papaya and pineapple smoothie
Peel and deseed the papaya. Chop the flesh and place it into a blender, food processor or Smoothie Maker. Peel the pineapple, chop the flesh and add this as well. Add the orange juice, a squeeze of lime juice and a few ice cubes. Whiz everything until smooth and serve immediately.
