Lazy weekend lunches
We often have to fit food around our busy schedules in the week, but come the weekend you can really enjoy the whole foodie experience, from a relaxing prep to lazing with the newspapers whilst it's in the oven, and waiting for friends and family to arrive. After all, food's not just about filling up and keeping going - when we've a little time on our hands it's the perfect way to unwind and bring people together.
- 2 bacon rashers
- 1 tsp butter
- 1" slice of French bread, cubed
- ½ tbsp white wine vinegar
- ½ tsp Dijon mustard
- 1 egg
- handful of salad leaves
- 1 tsp chopped shallots
- ½ ripe avocado, sliced
- salt and pepper
- 1. Grill the bacon, allow to cool and then chop.
- 2. Melt the butter in a frying pan and cook the bread cubes until golden. Place on kitchen roll to drain.
- 3. To make the dressing, mix together the olive oil, vinegar, mustard, salt and pepper.
- 4. Poach the egg using your preferred method.
- 5. On a large plate, layer the leaves, bacon, shallots, avocado and croutons and pour over the dressing.
- 6. Top with the poached egg.

Tip

Bream Papillote
It's so easy - just take your favourite fish, (we used bream but it works just as well with other fish), take our Parchment Lined Foil and throw in some red peppers and red onions that have been gently fried, garlic cloves, thyme, seasoning and olive oil and simply bake until the fish is perfectly cooked through.
