Carrot and courgette muffins

Not just for dinner, some vegetables make for a tasty treat at teatime too!

Let's cook… Carrot and Courgette Muffins

Serves 1 hungry mouth

  • 1 courgette (about 20g)
  • 1 carrot (about 20g)
  • 1 egg
  • 2 tablespoons milk
  • 1 heaped tablespoon raisins
  • 1 tablespoon sunflower or vegetable oil
  • 75g plain flour
  • 15g light soft brown sugar
  • 1 level teaspoon baking powder

Time to wash your hands

It’s great fun being a kid, but little hands can get a bit messy with all the exploring they do.

So before helping mum and dad in the kitchen, you need to make sure your hands are nice and clean by giving them a jolly good scrub.

Roll up your sleeves, make lots of lovely lather with the soap and get scrubbing.

Don’t forget your fingernails, those pesky germs like to use them as a hiding place.

All done? Dry them off with a clean towel, put on your apron and you’re ready to start cooking!

What to do


Line 9 of the muffin tray holes with the muffin cases.


Snap the courgette, then carefully grate it. Snap the carrot, then carefully grate that too. Break the egg into a bowl and whisk it with a fork. Add the grated courgette, grated carrot, raisins, milk and the oil and mix. This is called the wet bowl.


In the other bowl, mix together the flour, sugar and baking powder. This is called the dry bowl.

What to do


Pour the wet bowl into the dry bowl and give it a good stir with the tablespoon.


Using the 2-spoon method with the teaspoons, spoon the mixture into the muffin cases in the muffin tray.


Place the muffin tray on the baking tray. You’ll need to ask an adult for help with this part. Place the tray in a preheated oven, 200C fan, 220C, Gas Mark 7, for 12-15 minutes.

Once the Carrot and Courgette Muffins have cooled down a little, you can eat them!
