Griddle pan, grill, skillet, ridged frypan... call it what you will, we love the way this pan gives food a delicious chargrilled flavour and characteristic stripe. And when it comes to steak, pork, burgers, chicken or fish, cooking on a griddle pan is a healthier alternative to frying as you need little or no oil and the ridges allow fat to drain away.
Usually thick and heavy based, griddle pans are perfect for food that needs to be cooked at a very high temperature, so they're ideal for searing and browning, but it's the raised rides that make the real difference & somehow, a chicken breast becomes more tempting when chargrilled and a tuna steak really looks the part with golden brown lines.
Griddle pans can be weighty, especially if you choose cast iron, so it's worth keeping this in mind, but lighter, non-stick versions are available, and some even have stainless steel bases that make them suitable for all hobs including induction hobs.
