During the 50s Mr Lopez, the inventor of the world famous Pina Colada cocktail, was dissatisfied with the calibre of existing coconut cream… so he took matters into his own hands by creating his own! Instead of steaming the nut, he removed the flesh by hand, so it retained all of its delicious flavour.
