Haven't quite got the hang of it yet ...

I've just used this for the first time. I used 2 of the recipes in the little booklet. The beefburgers came out okish - but they seem to expand as I push them out, making them thinner and wider. I cooked them on my grill, I don't think they would have survived on the BBQ - too crumbly. They tasted delicious though :) I also did the chicken ones. These came out very wet and when I pressed them out they were very wide and thin. I ended up just patting them into shape with my hands - which kind of defeats the object of buying the press. Again, absolutely delicious but wouldn't survive a BBQing. What am I doing wrong?
