"This spatula is mad"

I have to use this spatula in conjunction with the sugar thermometer to get a gist of what the temperature might be aroundabouts. The spatula takes ages to settle down and looks as if it is going haywire, and then temperature keeps going up and down without the spatula being touched. If it immersed in jam and not touched, it cannot keep varying by as much as one degree C. I am on the lookout from an accurate JAM thermometer to stop more batches of preserve being ruined.
