"What "7 Variable Thickness Guides" means"
07 December 2017
With no adjustable back plate the slice is about 18 mm (thicker than "thick sliced" loaves). With the back plate in the rear groove Thick side out gives 13 mm ("medium sliced"). In the front groove Thick gives 8 mm. Against the front ridge Thick is around 3 mm. The adjustable plate is 3 mm thick, but only 1 mm of that sticks on out the Thin side, so Thin gives just 1 mm thinner. If the plate had been 4½ mm thick it would have given uniform 2½ mm slice thickness steps from 13 mm down. Requires dexterity (to hold knife and loaf), practice (to keep knife against guides) and a sharp knife.
