I recently purchased a Lakeland Bread Maker Plus and thought I would try the Carrs Wholemeal Bread Mix. After reading reviews about the dough improver I bought this to add to the mix. Unfortunately the bread rose to such an extent that it completely filled the bread maker baking onto the walls of the oven compartment and completely blocking the dispenser for adding the extra ingredients. I had difficulty removing the cooked loaf as it had stuck to the side of the bread maker and it was uncooked on top. I have yet to try either product on its own.

Sorry this is not a review of this product but rather a suggestion to all those who have an issue with the short sell by date. We don't drink coffee but like to have it to offer to visitors and used to have a problem with it deteriorating in the jar as we used so little. Then I ht on the idea of keeping it in the freezer and it works brilliantly as the coffee seems to stay "fresh" almost indefinitely. I am wondering if the same thing would work for the improver? Just a thought.

After buying a new (and not cheap) breadmaker I was very upset to find many of the loaves had become bricks! Lakelands wonderful Customer Services promptly offered to send me 'dough improver' - a product I'd never heard of but was willing to give a chance. It's transformed the loaves and I am, once again a happy bunny. BUT. But, the use by date is ridiculous compared to the size of the tub and the amount required per loaf. At £7.99 plus P&P Lakeland need to be working with their supplier to offer smaller tubs or better use by dates! A minor complaint admittedly but a complaint noneth

I make wholmeal bread on a daily basis by hand anf have found that this product give the bread a lovely light texture and lovely crust. I always use 2 teaspoons on improver to 1lb 3oz of flour approx 500g and dried fast acting yeast and have perfect results everytime. Will make sure I never run out.

A Great Product”
This has been a great find! No more heavy, close textured bread when I use this. Even bread made with dark rye flour is lighter. I use 2 teaspoons in the mix and although it says not for use with just white flour, I have found the texture of white bread also improved by just using 1 level teaspoon in it.

i am getting amazing r esults with this product. If I use white flour with wholemeal I only use 1 tsp and still obtain fabulous results. I wasn;t aware of the short shelf life until i read the other reviews and this is such a shame as I notice mine only has 2 months to run and I have only just received it. That means I shall have to throw away a good half the tin. Apart fromthat I would thoroughly recommend it for all home breadmaking but especially those dread brown loaves. I no longer use them to build a wall but instead I can enjoy tasty bread without throwing any away.

Best before or Use-by?”
I always use this product when making multi-grain bread in my bread maker, and the loaves always rise beautifully and have a lovely soft light texture. I didn't even realise it had a 'best before' date on it, and on checking on my current tub it is Mar 2011! 'Use by' and 'Best before' are very different and in my experience this product continues to give excellent results for months after its 'best before' date.

This product is extremely good, and gives quite excellent lift to wholemeal bread. There is a massive flaw with this product and that is the size. The tub is way to big. I make two large loaves a week and still I have to throw heaps away because the 'use by' date is so short. I challenge anyone to use a whole tub in just twelve weeks, which I have discovered from in store staff is the average. If this is the case then surely Lakeland should offer this in smaller sizes. A tub half the size would be perfect. I have wasted so much money on this, and it is essential, but it needs sorting.

Short Best Before date”
Just bought this dough improver and though I have not even tried it yet have realised it has a very short date. Must use by July. I have not even made any bread yet and I doubt most people would even use a tub that quick so am very disappointed as it's not cheap and with my fuel makes it very expensive to return. I bought yeast which has a date for two years and Im sure I will use that quicker.

Makes no difference”
I bought some dough improver hoping that it would lighten the texture of my wholemeal bread. Unfortunately I found that it made no difference at all. I make wholemeal bread using a good brand of flour and, while not very heavy, it is certainly more solid than my white bread. I tried the dough improver several times but neither I nor my family could tell any difference. I already use a little vitamin C powder as recommended in my bread machine book, so perhaps this is why. I was also disappointed to find that the dough improver only had a shelf life of about 2-3 months from date of purchase since the tub contained far more than I needed within that space of time.

I bought a tub of this last year and am still using it with excellent results! (I haven't even looked at the use by date on it!) My recipe book for my bread machine includes a teaspoon of dough improver with many of its white bread recipes and they always turn out great.

I bought the dough improver, and without knowing that I shouldn't I added it to my usual bread machine recipe, the whole thing was a very heavy stodgy rubber brick would have made a good door stop. In case I had not carried out the instructions properly, I repeated the exercise - calamity! Use it for heavy hand doughs only folks, I wasted two perfectly good Carr's white bread mixes etc! I did not see any instructions on the product advising of this fact.

This dough improver has saved me from throwing out my bread machine. Brown bread is the order of the day but it was oh so heavy until I discovered it. I even put one tsp into white bread using 12oz of flour when white eaters are visiting. As for the sell by date, these are only a guide and I have been known to use it over a month past the sell by date with no ill effects and, still giving good results. It is stored in a very cool place. Perhaps that makes the difference.

I think the very brief use by date is a concern however from someone who has just worked their way through a carton of that VitaminC stuff, a Carrs bread kit (10 little bags of flour) the yeast in the orange packet, I think its Doves too and have yet to get anything remotely looking like a loaf of bread I have to concede that my abilities in that department are dire. The products seem great pity about the cook. However, I will say that I think I'll persevere as I'm now onto a really good recipe for cavity wall insulation foam. Absolutely nothing expands as rapidly using these products as my dough! 5 Stars for keeping me amused for ages!

Not for white loaves?”

I bought this not knowing that it is only for heavier doughs, such as wholemeal. I had wanted it to try with white flours and so contacted Lakeland, who kindly refunded the cost. The other thing I'd point out is that the date stamp, on the pot I was sent, was only a few months ahead: you'd have to make a lot of bread to make the large pot worthwhile. Update 28/2/2010: Subsequent to the review above I bought two great bread-making books and got the bread baking bug! I hadn't found anyone who wanted the Dough Improver so I thought I would try it and make some brown breads: a multi-grain loaf (which I'd made unsuccessfully in the past) and a honey, sunflower & pumpkin seed loaf. Both turned out very well. I've also tried it with a basically white loaf recipe I've been experimenting with that I substitute 10% of the white flour with spelt wholemeal. Comparing with and without dough improver: the former was better. I've sent a cheque to Lakeland!

Was not overly pleased with my breadmaking results until I discovered this product - works brilliantly with heavier flours and produces lovely light loaves. I do however agree with the previous reviewer about the "best by" dates - only two months on the tub I bought and will need to make lots of bread to use within this time (this has lost it a star).

The best thing since sliced bread”
I read the reviews for this and thought they were too good to be true - they were not. This product is bril. I've made wholemeal and granary bread using the improver and they have turned out fantastic. Previously I would have been able to build a house with my attempts. Will certainly be buying this again - how did I live without it.

You must keep this product in stock”
I have been a bread maker for many years and now that I live in a village in Cyprus it is an essential part of my daily life. I find wholemeal bread just too heavy without a dough improver such as this, it transforms it into a light digestible bread. The fact that it is an organic product too is a bonus.As so little is needed it is inexpensive to use and the tub lasts well even in the heat of Summer. Visitors to Cyprus almost always have a Lakeland product in their suitcase for me
