This pan is quite heavy as you would expect of a griddle pan. This means that the food cooks evenly and you get the nice chargrilled lines on the food. One bit of advice though... don't make the same mistake as me! I have a standard sized kitchen hob built into the worksurface. This square pan is bigger than a single ring, but does not straddle two rings. I centred the pan on my largest ring, but didn't account for the spread of heat and before I knew it, two knobs on my hob were scorched and ruined. It has just cost me £40 to replace the knobs! An expensive mistake! I have used the pan since but am very careful of both the knobs and the worksurface.
