By nature I'm a skinflint and an improviser, but a banneton is pretty much a necessity for proving sourdough boules. That being the case, it may as well be this one, which is robust, well made and likely to last for a long, long time. So long as it's well floured the dough won't stick unless you over-prove it, and loaves come out well shaped and attractively patterned. Cleaning is no problem with a stiff brush. I wouldn't be without mine, and will certainly invest in the oblong version too eventually. Highly recommended.
