We've discovered the most delicious, handmade, brandy-fed fruit cake virtually on our own doorstep. In the picturesque valley of Mallerstang, near Kirkby Stephen, Dianne Halliday has converted a barn, in the grounds of her working sheep farm, into a real cottage industry. Following her mother's recipe, Dianne insists on using fresh eggs from the nearby village of Carrlingill, finest flour from Carrs' mill in Silloth ... and you can taste the difference. Crowned with apricots, cherries, pineapple, papaya and crystallised ginger.
