Tempering Chocolate
To ensure your chocolatey treats have that professional-looking sheen, you will need to temper your chocolate. This stops the cocoa fat from separating, preventing that dull grey finish and meaning the chocolate shrinks slightly when set for an easy release from the mould. The first time I've used a mould like this but I'm very disappointed with the results. I tempered the chocolate but releasing them was impossible, and defiantly not the "gentle tap" suggested. After lots of different attempts, in the end 2 came out and the rest I've just had to brake open and eat from the mould (feeling sticky a little sick now - they were meant to be a gift). A waste of some very expensive chocolate. Maybe I did something wrong as this was my first attempt but it will be a while before I want to look at chocolate again. The 2 that did come out look very professional.
Thanks for placing your review. We're sorry you've had difficulties releasing the chocolates from the mould. We'll be in touch shortly to help put things right for you. We do recommend to prepare moulds by washing in hot soapy water with a non-abrasive sponge, rinse with hot clear water. Polish each mould with cotton wool or a microfibre cloth. The filled mould can be placed in the fridge for 15 minutes. This will help the chocolate shrink and release from the mould. The chocolates will struggle to release from the mould if the chocolate hasn't been tempered well so it hasn’t shrunk away from the mould.
I am very new to making chocolates and doubted I'd achieve such excellent results! I can only say that I completely amazed myself!! The chocolates came out of the Moulds so easily -I put them in the fridge as suggested first. I was so impressed I went on to make ganache centres, capping them off. Once again they came out of the Moulds perfectly. I can't believe my success and keep getting more ideas!
I make around 100 chocolates a month with very few release failures. My normal moulds are silicon but a wanted to try a solid mould. With this mould I had 100% failure to release. All the other moulds I had used at the same time were fine. All my chocolates were hollow filled so I can't say if it would have worked with solid chocolates. I have to say I'm disappointed with this product

I bought the swirls mould and experienced the frustration shared with others, re releasing them from the moulds. Went online and have discovered that if you put them straight in the freezer for 20 mins, they drop out! If they don't you simply put them back in freezer until they do !! Lakeland need to include more information on their packaging as i experienced a LOT of frustration before i went online and feel that this should not have been necessary as CLEAR instructions should have been included.
