I bought this to not make mince pies (ugh! sorry), but to make savoury pies, like chicken curry or lamb curry, which you need to cook on the dry side. Yummy. I cook mine after its heated, but I make my pies ahead. I have one of Lakeland's 12 cake trays with the removal bottoms. Roll out the dough, make the shapes, insert into the cake tray, spoon in the filling, and put the top on. I have cooked right away, and also put it back into the fridge to cook next morning, to take to work. The following AM, I heat the pie maker, and drop in the pies I made the night before. 20 mins later 24 pies.
