I have been using this tray for at least 2 years and it is still as good as new. The best way I have found to create the perfect rustic Baguette is to use the tray in a large baking tray to prove the dough, then just before it goes into the hot oven, spray the loaves with a fine mist of water and place another tray over the top as a lid to create a mini steam oven. After around 40 minutes 'voila' rustic Baguettes!
