Starting from a traditional family recipe, Mary has recreated that wonderfully light, classic taste of Hollandaise Sauce with a hint of lemon. It might even be better than if you’d made it yourself – and certainly a whole lot quicker and easier!
This Mary Berry Hollandaise Sauce is just the thing for making the perfect Eggs Benedict, too. Just toast and butter both sides of an English muffin, place a slice of good quality ham and a poached egg on each half and top with a dessertspoon of warmed Hollandaise Sauce. You can even heat it gently and use it as a scrumptious pour-over sauce with fish or asparagus.
