My Kitchen 12 Cup Mini Sandwich Tin

I thought I would use the tin a few times before I wrote a review. Like a few of the other reviewers, initially I added too much mixture and the cakes rose too high. For me, I have found that a 2 egg/100g of everything mixture has so far worked the best but I'm still having fun practising. I also use Cake Release which works really well. Thanks Lakeland for the lemon curd cake suggestion - my husband loves them!

My Kitchen 12 Cup Mini Sandwich Tin

Thoroughly love this product. Presently I have only done mini Victoria Sandwiches and have used my usual sandwich recipe and they've turned out perfectly. Eager to find different recipes and experiment. Fabulous addition to my bakeware family.

My Kitchen 12 Cup Mini Sandwich Tin

Contrary to many reviews, I used a 4 x 4 x 4 + 2 egg mixture which filled the tins perfectly. The baked cakes were just the right size and in proportion. Just like a mini version of a Victoria sponge. Not too high and no spilling over the top to give a mushroom effect.

My Kitchen 12 Cup Mini Sandwich Tin

Today I was given this cake tin as a birthday present-hint? The quality of the tin is excellent and I have just produced 12 superb mini Victoria sponges using the recipe on your website. The tin was very easilly cleaned using hot soapy water. I am delighted with my present and would highly recomend it.

Like this a lot.by Ruth

My Kitchen 12 Cup Mini Sandwich Tin

I was quite excited when I received this cake tin. It is very good quality, heavy duty. So, I had a trial run. I used the Be-Ro recipe for Victoria Sandwich, i.e 4oz Flour, Sugar, Marg and 2 eggs. bake for 20mins on 160c. It worked perfectly quantity wise, it filled all 12 holders, with none left over. if you fill just over half, its fine, although some of mine weren't even, so next time I'll use my ice cream scoop. I used Cake release and it was fine for the sides, but when I took the little bases off, some of the cakes stuck to them, I will need to practice a bit more. But I'm happy.

My Kitchen 12 Cup Mini Sandwich Tin

Had read the negative reviews and had some concerns. However made 3 egg mix as stated. Just dolloped it in with a portion server (ice cream scoop) and put in the oven. They all rose over the top but I levelled them off with a bread knife before I took them out of the tin. Then after 2 minutes cooling in the tin I tried to turn them out. This was fiddly as tin was still very hot. So I put a wire rack on top and turned the whole thing over pushing the loose bottoms as I lifted the tin. They came out perfectly: rough cut edges were now on the bottom. Good eh? I did grease tins well.

My Kitchen 12 Cup Mini Sandwich Tin

These are so fab. Easy to use and make such dinky wee cakes although you do need to leave the cakes a few minutes for the tin to cool enough before you can push the cakes out from the bottom unless you have asbestos fingers of course. I use the quick release cake stuff sorry can't remember the correct name but another wonderful don't be without product from lakeland. My son loves these and thinks they are a real treat and so much better than a fairy or cupcake, he even asked for them for his 18th birthday instead of a cake.

I made these today. Must grease tins more or learn to use easy release spray better.Mixed mine in a food processer like all my sponge cakes and sandwiched mine with jam and cream. Yes they were domed and looked a bit diffrent size but who cares still really nice, will do again.

My Kitchen 12 Cup Mini Sandwich Tin

I found this recipe in a leading supermarket magazine, it makes 12 perfect cakes every time using 125g Butter 125g Caster Sugar 2 Large Beaten Eggs and 125g SR Flour. We love them with lemon curd and cream or jam and cream (or creme fraiche).

My Kitchen 12 Cup Mini Sandwich Tin

I bought this for my daughter who loves making cakes. After a couple of disappointing results we found the recipe on your website and she got the right amount of mixture in the tins which produced very professional looking delicious cakes. If you get disappointing results at first it is worth varying the quantity until you get acceptable results. In my opinion well worth the effort. Only downside is the price but it is good quality and easy to clean.

FIRST ATTEMPT !by Elaine

My Kitchen 12 Cup Mini Sandwich Tin

Trried this out this morning for the first time using the chocolate sponge recipe on the site, overfilled slightly so have experienced the 'mushroom effect' will need to trim them up. There was too much mixture for 12 cakes. I think to get them all the same I would have to weigh ech portion. Used my small icecream scoop to start off with and topped up. Think I'll use large scoop next time. Practice makes perfect.. I hope !

Professional looking cakes - Maggie, Cambridgeshireby Margaret

My Kitchen 12 Cup Mini Sandwich Tin

I am having great fun with this tin but it needs using slightly differently than a normal tin. Have so far cooked mini victoria cakes, chocolate mini cakes, and the easter mini cakes. (recipes on this site A few tips: Brush the tins lightly with Cake Release. The mixture will fill the tins more than the recipes states but this is ok if you put equal amounts in each tin. Tap the tray lightly on a hard surface and then using a teaspoon make a slight dent in the centre of each mixture. (this prevents the mushroom top effect). Leave to cool before taking out. Use a cloth to push each cake out.

My Kitchen 12 Cup Mini Sandwich Tin

I too overfilled the tins on the first try - so I agree that a recipe leaflet in with the tin would be helpful - but I did discover that the smaller circle cutter from the tartlet making set is the perfect size for trimming overflowed cakes! I am sure I saw a suggestion of using the tin for mini simnel cakes - but no recipe in the Easter section? I have used it for mini banana cakes and plan to try mini fruit cakes as well.

My Kitchen 12 Cup Mini Sandwich Tin

I purchased this mini cake tin a few weeks ago and used it for the first time at the weekend and made mini choc cakes. Absolutely superb results and all popped out without any trouble at all (I did lightly grease beforehand). I think the secret of achieving good results is to be mindful of how much mixture you place in each mini cake tin.

Perfect mini cakesby Kathleen

5 stars out of 5

My Kitchen 12 Cup Mini Sandwich Tin

I bought this tin last week from your Chester shop on day out & used it this weekend. I found it really easy to use. A quick spray with cake release, fill with victoria sponge mix, about 2/3's to 3/4 full & just smooth down a little as you would when baking a sponge in a regular sandwich tin; 30 minutes later I had 12 little sponge cakes ready to cut & sandwich with jam etc. The cakes pushed out easily & the little bases came away cleanly. Unlike some reviewers I found the tin no more fiddly to wash than the average bun or muffin tin. Little chocolate cakes next I think!

12 cup mini sandwich tinby Yolanda

3 stars out of 5

My Kitchen 12 Cup Mini Sandwich Tin

Sadly there is no quantity indication on the box, which I think is bad for Lakeland. I used a 3 egg mixture and this proved too much as the cakes are heavily domed and came over the top and they stuck at the bottom even though the pan was well greased. I think some of your parchment circles are called for here! I have sliced the tops off and they are being enjoyed at the breakfast table with some raspberry jam but this means I will have to decorate the top of the cakes with cream now. I will try again with a 2 egg mixture and see what happens - if it doesn't work it be be going back!

A note from the team: Thanks for letting us know you've had some trouble with the mini sandwich tin. We've a recipe for mini victoria sponge cakes available, you can find this by typing 'r80272' in the search box above. We've written it just for the mini sandwich tin so we hope it helps! For best results level the tops with a teaspoon before placing in the oven. Thanks for your review.
