Lemon Extract

A long and dedicated user of Lakeland's quality vanilla extract I was delighted to find this among the shelves. It is exactly what it claims. No fiddling with zesting and juicing lemons in the right quantities to make that strong yet light zing in your cake.
A basic sponge takes the extract wondrously and the flavour of lemon really comes through pleasantly. The extract, however, doesn't fair so well in other goods. Using in biscuits produces a bitter taste and caution should be used when adding to icings as it quickly overpowers and becomes too strong and seemingly artificial - better to stick to fresh juice for this.
Would have been nice to have some indication of how much to use in baking; trial an error is all one has to produce a good result. However, once worked out (I found 2 tsps for a 4 egg sponge works well) it is a perfect companion for cakes and breads.

This smells and tastes fantastic .Have used it to add to marinades like tandoori ,also in cakes and added to plain yoghurt . I also add few drops to a gin and tonic,it really improves it ! Picture might make you think its a small bottle like those you usually buy essence in but its much larger than that ,its worth the price as will last ages .

I use it in your EasyYo Low Fat Greek yogurt to give a really fresh flavour. Just one tiny complaint - it is rather uncontrollable in the present bottle. The neck could do with a restrictor, especially as a little goes a very long way.
