Brownie Pan

All my family, friends and sons' friends and cricket mates have come to expect my Hummingbird Brownies on a regular basis, so much so, I've ordered a second pan to cope with the demand! I got sick of trying to prize them out of a normal brownie tin and often lost the bottoms and found it frustrating trying to cut them into even pieces. I have been thrilled how easy it is to use this pan. After baking, I wait 10 minutes before lifting the base out of the pan and then another 5 minutes to lift out the divider. I still use greaseproof paper (as per the recipe) and it's such a pleasure that they come out of the tin easily and perfectly formed.

This brownie pan is excellent, I used it in the roasting oven of a two oven Aga (ie temperature generally too hot for baking) without burning. You need to know how much mixture it takes though, I used a Nigella Lawson recipe with 6 eggs, 225g flour, 375g chocolate and 375g butter and 500g sugar: the pan will take half of this mixture, so I am buying another one!

I never had much success making brownies before buying this; the outer edges always seemed overcooked, whilst the middle was still too sloppy. Not with this tin though. One of the best kitchenware purchses I've ever made.
