The ice-tempered blades are hardened and honed to a longer-lasting, razor-sharp straight edge, unlike the bevelled edge which is traditionally used in knife-making. Despite their superior quality, the knives are surprisingly lightweight to use, and delicately balanced inside with sand, for comfort and ease of use.
