I've been searching for a product to protect the cut face of my cheeses, for some time, (I'm a cheese maker). We have always used the 'Brie like' twin part paper,(perforated inner and grease resistant outer) but this never prevented mould forming on the cut face. Potassium Sorbate helped this, but it was your anti-bacterial cling that has transformed our marketing and we now cover the cut face of the 'Kingham Green' cheeses before wrapping them, with so far, complete success.
