I find this a good improver for all the breads I make, whatever the colour - the trick with white flours is to use far less than suggested on the pack as the flours don't need much help anyway unless they are full of extra ingredients. With brown breads the enhancer gives a good rise without producing a "cotton wool" texture in the bread, something that many enhancers seem to aim for. An excellent and versatile product, whether working by hand or with a bread machine. P.S. the enhancer doesn't simply cease to work at midnight on its supposed expiry date - it can be used far longer.
