A good sharp knife is the most essential piece of kitchen equipment in my opinion. Food preparation with a dull knife is just no fun.
I've tried a number of sharpeners and I can only get a really good edge by using a proper whetstone. But that's messy and time-consuming, so I don't do it often enough.
This little gadget is a godsend.
There are three ceramic wheels of different coarseness. A coarse one for starting a very blunt knife. A middle one for a dull knife and the fine one for honing an already reasonably sharp edge.
The combination of the shape of the ceramic wheels and the guiding channels means that you always have the corect angle between the blade and the ceramic stone.
The key to a sharp knife is to use the fine wheel after each time you've used the knife and to apply almost no pressure. Odd, I know, but pressing hard givers poorer results that just a few gentle stokes.
On a very good day (about every three months) I can get a better edge with a standalone whetstone. I can get a great edge with this every time. I leave it on the worktop, with water in the base, and give the knives a quick top-up each time I've used them.
This is actually a product that works, unlike a lot of gadgets.

With just a quick brush with the knife after each use keeps them as good as they were when I first bought them.

This knife sharpener works where nothing else has - but I've dropped one of the wheels. I don't want to buy a new sharpener, so please, Lakeland, can you stock the grinding wheels too?
